Cimaio is the work of top wine consultant Stephano Chioccioli and the Casal Farneto winery in the Marches region, on Italy’s beautiful Adriatic coast. The Marches is home to the very famous Castello di Jesi, revered for its scintillating, dry, nervy Verdicchios.
Cimaio dares to be different, however. This is a late harvest wine, only made in years when the grapes have been affected by noble rot – just like a Sauternes or dessert wine. And, just like a Sauternes, it’s deeply aromatic and incredibly complex. But (different again!) it’s not nearly as sweet. It’s not dry either. It’s somewhere in between.
As James Suckling says, it is “a unique white, quite fascinating and luscious in flavour … with intense aromas of dried apricots, creamy pineapple, candied lemon, wax and honey.”
Those wonderful honey, candied apricot, and pineapple flavours and its creamy complexity make it a perfect wine to serve with cake at afternoon tea. The aromatics of the wine prime the senses, and the sweetness of the cake balances the luscious wine to perfection. Coconut tarts, custard tarts, pineapple bun or a slice of classic Madeira cake all make a marvellous match. Delicious! It’s a stunning match to a cheese platter at the end of dinner too.
