A fine Sauvignon Blanc from a fifth-generation Loire estate, excellent fruit and classic flintiness Pouilly-Fumé is one of the Loire's most highly regarded white wines, rivalled only by those of its neighbour, Sancerre. Both focus purely on Sauvignon Blanc for whites, but the limestone, marl clay and flint of Pouilly brings a classic gunflint aroma to its finest wines. Jérôme Pabiot is a fifth-generation winemaker, combining sustainable, modern techniques with the traditions of his forebears. His 2021 bears the classic, smoky gunflint aroma of the finest Pouilly-Fumé, grown on Les Caillottes (pebbles), while fermentation with wild yeast and ageing on its fine lees adds complexity and texture.
