The aging process is extreme: first in clay amphorae, then in an underground river 200m below the surface. Accessing the wine requires navigating 80m of ladders, narrow passageways, and even a canoe ride! The result of this six-year "extreme cellaring" is a rich, spiced red with incredible purity and a long, complex finish.
