Delicious, creamy mousse spumante fizz from northern Italy, made from characterful Ribolla Gialla This luscious fizz is the work of Valerio Civa at his family winery in Friuli. It lies very close, in fact, to famous names Livio Feluga, Marco Feluga and Jermann, whose top wines fetch up to £70 a bottle. Valerio remembers, as a child helping his grandfather all summer in the vineyards, breathing in the aromas of the grapes and the countryside. Then, in the cellar, smelling the sweet scents of the fermenting musts. It convinced him that would be his vocation. Today he boasts extensive vineyards and a high-tec cellar where he makes this crisp, orchard fruit spumante. Nearly all Ribolla Gialla, picked early for freshness, with a 15% portion of Chardonnay, this sparkling wine has luscious ripe fruit, zesty lemon notes and a creamy mousse.
