From a tiny parcel of 50-year-old-vines on classic oyster-shell Kimmeridgian soil, this is strikingly mineral with crisp, fresh apricot and floral aromas. Very expressive with a lovely satiny texture. Servin is a superb, 7th-generation family domaine, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation and Neal Martin writing that they “come warmly recommended”. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s brother-in-law, Australian winemaker Marc Cameron. Decanter journalist Andrew Jefford describes the wines as having “great elegance, purity and length”. The 2023s are a great news story, and will offer lovely drinking even in relative youth. There is text book Chablis tension, with just a hint of the evocative crustacean tasting notes the region is famed for.
