Don’t underestimate the potential of the Languedoc’s top vineyards and ambitious winemakers like Mark Hoddy. This is a dense, luscious red, packed with cassis and toasty spice.



Chai winemaker Mark Hoddy reserves the Belle Roche label for a red wine made from the best parcel of grapes of the vintage. In 2022 he found just the ticket in a few rows of dark, thick-skinned Cabernet, grown in high-up Languedoc vineyards close to Carcassonne. There the climate benefits both from Mediterranean and Atlantic influences, hence a wine that echoes both of the warm ripeness of the Med with the structure of Bordeaux.

It's a densely flavoured red, its colour almost black – the reason he calls it his precious ‘black diamond’ of the vintage. Meticulously crafted by Mark at the cellar, Belle Roche is best decanted an hour before serving, just like a claret. It’s ideal with a juicy steak, a rich lasagne or a hearty casserole. Decant.

Mighty Cabalié is one of our best loved ‘BIG reds’ and this old-vine version has even more swagger. Seriously intense Carignan gives a boost of inky dark fruit to soft, spicy Grenache in this stonking, velvety, southern French red.

Hervé Sabardeil, our winemaker with limitless talent, has been making Cabalié, the big, ripe Catalan red, for over 15 years. He added the old-vine (Vieilles Vignes) edition in 2011, originally as a one off, but it was so popular we insisted he did it again. And again! The magic to this punchy red is really in the vines. At 60 to 100-years-old, yields are minute (about half of a Grand Cru claret). As a rule of thumb, the smaller the yield, the more concentrated the fruit, the more flavoursome the wine!

That’s why we call it Cabalié’s Big Brother. Still made in the same style that was beloved by the Roman centurions and now our customers too, it packs even more flavour than the original. Ideal with garlic-roasted lamb, rich stews or cheese.

Description

Roussillon is in the deep south of France, between the Pyrenees and the sea.

When I came over the high pass south into the Agly Valley in the 70s, I was captivated by the ancient vines on steep, terraced hills, topped by high, ruined castles. It was wild 'unknown' territory. That's where bestselling Cabalié, made by the legendary Hervé Sabardeil, is from. Hervé buys grapes for Cabalié from many vineyards, but the best grapes came from two vineyards of 100-year-old vines on schist/granite soils. They are two of France's oldest vineyards, lying on steep, terraced hillsides. When Hervé learned the farmer was retiring, he bought those two vineyards – and thus we have the 'Grand Cru' Origine … the purest essence of Cabalié … made solely from those two vineyards. It's a nearly all dark, spiced Carignan, with a few rows of silky Grenache, Syrah and Mourvèdre, which add to the incredibly rich fruit and luscious texture.

Fabrezan is a top village in the Languedoc's Corbières region. There you'll find a small co-operative cellar, making fabulous rich reds by a method that makes them ultra velvety. This is their Grande Réserve Syrah brimful with lavish black fruit.

For over 40 years, Corbières’ Cave de Fabrezan has proudly made nearly all its reds by maceration carbonique, an exactly and costly method which produces deliciously silky, fruit-filled wines. Bunches of hand-harvested grapes are left to ferment whole and their juice decanted off the skins at the precise moment the best colour and aroma have been extracted. This special Réserve is made from an exceptional parcel of pure Syrah – a dark, velvety, sumptuous red named after Fabrezan’s most famous ‘son’, Charles Cros. Born in 1842, he was a poet (inspiration for the Surrealist movement) and an inventor (for colour photography, the paleophone and what became the gramophone). An exceptional Syrah, it’s brimming with black fruit and pepper.

Val de Montferrand's vineyards run like ribbons through the Grand Cru of Pic Saint Loup, "one of the most sought-after zones of the Languedoc" (Andrew Jefford). Here lie famous estates like Domaine de l'Hortus and Château Lascaux, whose wines fetch £25+. It's a region where the coastal plains transition into grand mountains, namely Pic Saint Loup and Hortus. Legend has it that the two used to be one great peak, until two lovers, Estiennou and Estiennette, were fleeing an arranged marriage that would keep them apart. The giant Gargantua heard their cries and, taking pity, used his great sword to split the mountains and give them a means of escape! Love story aside, it's a rich, dark red, with gorgeous depth thanks to the cool climate.

Le XV is known to thousands as our ‘King of the Big Reds’. It owes its intensity to Grenache from vines, some over 100 years old, that grow on the rocky slopes of the Pyrenean foothills in the Montagne Noire and yield only tiny quantities of grapes. Le XV also benefits from the painstaking care of self-confessed southern French wine aficionado Mark Hoddy, whose draconian selection process sees him earmark in advance every vineyard he intends to harvest and micro-manage every stage of the winemaking. This takes time, but you can taste the result in every delicious glass!

Richly textured, with layers of ripe bramble fruit kept smooth by warming alcohol and soft, ripe tannins, this is a red to enjoy with roast lamb, steak or a hearty stew.

Rex Mundi is a sumptuous red that always fires the senses. A devilishly delicious blend of spice-laden, lip-staining Shiraz and raspberry-rich Grenache from very deep in southern France. Irresistible for lovers of exceedingly dense reds.

This irresistible black beauty is made from fabulously intense Shiraz and Grenache grapes grown on the craggy hillsides of France’s deep south – the Languedoc-Roussillon. Terres d'Arboras 2022

In the foothills of the Cévennes, in northernmost Languedoc, lie the great Crus of the region, Larzac and Pézenas. Threaded between them is this ancient, almost forgotten IGP. Smooth with black, polished herbal fruit.



Scattered on the high-altitude slopes of the Cévennes foothills, lie the vineyards of Terrasses de Larzac. The top wine from there fetches £100 a bottle. Nearby are the other Languedoc crus - Montpeyroux, Pézenas and Pic Saint Loup. Tucked away among them and in the shadow of the great Mont Baudile lies a forgotten IGP, named after this towering mountain.

Cave Fonjoya boasts 90% production of this tiny area and the very finest grapes are reserved for this wine. A classic blend of Syrah, Grenache, Carignan and Mourvèdre, it's a sumptuous, smooth red, with polished tannins and deep black fruit with herbal nuances. Pure charm and a great partner to grilled meats, ideal at a barbecue, or with a rich, garlicky, herby casserole, veggie or not!
