Fronsac's fine Château Dalem perches high on a hill, surrounded by its 14 hectares of sloping vineyards. It's an historic estate, with records dating back to 1610, that stayed in the same family until 1955. Michel Rullier then took it over and today it's run with great success by his descendant, Brigitte Rullier-Loussert. Its vineyards are nearly all planted to Merlot, with a small amount of Cabernet Franc, and tended with meticulous care.

As you can see from critics' scores (92 points from James Suckling and 94 from Vertedevin), it is an admired claret and one that ages very well too. Matured in French oak (50% new), it has structure and length, but above all an appealing fruity depth. Perfect with roast meat or wild mushroom risotto.

Here, their clay and gravel vineyards are planted with the region’s classic grape varieties, which benefit from careful, environmentally friendly vineyard and vinification practices.

Château Sainte Marguerite 2009 showcases the greatness of the region’s top grapes, Merlot and Cabernet Sauvignon. Cabalié's popularity is down to a rare combination of imposing richness and easy drinking smoothness. Recreating that in white was no easy task. But Cabalié maestro Hervé Sabardeil has done it – years of searching, blending and hard work come to fruition in this, his ultimate expression of a southern French white. The magical grape mix is old-vine Viognier for intense honeysuckle aroma and soft texture, Muscat for dazzling grapey notes, and Colombard to keep it all zesty. And of course the other key ingredients are bright southern French sunshine, which ripens the grapes to perfection, sea breezes to keep them healthy and night harvesting to ensure maximum freshness. Bursting with tropical fruit, Cabalié is perfect with seafood or chicken.

We don’t usually have enough grapes to make any sizeable quantity (the rest is reserved for our claret), but the wine has such a following that we always ensure we make some.

It’s a 50/50 blend of Merlot and Cabernet Franc, fermented very slowly and cold in stainless steel tanks. That way we capture the delicate summer berry fruit and zippy citrus freshness. You can breathe in all its lovely aromas, too. It really is as pretty and crisp as its label suggests, and is delicious solo and versatile with food.
