In his Caravan series of wines, he likes to think of a grape that changes in style as it travels – makes an impact as it arrives and stays with you. Take his new release Pinot Grigio. It's made exclusively from free-run juice, giving it a pureness of flavour. Then it's fermented with specially selected yeast that brings out a grape's aroma. This accentuates the primary flavours of white blossom and lively peach, but also adds a hint of roundness to the wine. This fresh yet creamy white deserves a place in your fridge.
