Search for Domaine La Sobilane and you'll see it has an amazing reputation for the famous, fortified sweet wine of this Mediterranean area, Rivesaltes. Some wines going back 80 years. They are knockout, but so is the estate's gorgeous, opulent dry white. Rivesaltes hasn't been a fashionable tipple for the last 30+ years, so the enterprising family, situated close to the Med and just east of Perpignan, explored other avenues. They planted native varieties which they believed would excel and made a dry white. This exotic blend of Grenache Gris and Vermentino with Chardonnay proves them right – ripe peach and apricot meld beautifully with a bright lemony zip and characterful notes of grilled almonds and blossom. The Lauren-Cabaret cellar has been making great wine in the Minervois region for almost 100 years. Villa Claudius is pure, handpicked Carignan, whole-grape fermented (like Beaujolais) to highlight its bright silky fruit, wild herbs and spice notes.

It’s rare to discover a red wine from the Minervois region made purely from Carignan. Even rarer, when it’s all from old-vine Carignan, but for this prize-winning cellar it’s something of a speciality, clear from the Gold medal that it’s already won. Michel Chapoutier is renowned for his exceptional Rhône wines, but this region alone couldn’t contain his brilliance.

Since he took over the family estate in 1990, he has also acquired sites in Languedoc, Roussillon, Provence, Alsace – and far afield in Oregon, Australia’s Heathcote and Portugal. Domaine de Bila-Haut is his prize in the Roussillon’s Latour de France.

Its rugged slopes include soils of gneiss, schist, chalk and limestone, lending richness, depth, power and finesse.

This white is made from Grenache Blanc, Grenache Gris and Macabeu, with a little this vintage of Marsanne, Viognier and Roussanne for a more aromatic style.

Pure, unoaked and with white peach fruit, it pairs well with trout or chicken, but is great solo, too.

Southern France's Languedoc produces red wines of remarkable richness and depth. Long lived too, when they come from smart areas like Monpeyroux. A 3-way split of deeply concentrated Carignan, Grenache and Syrah, it's velvety with herbal black fruit.

Ambitious to achieve full cru status, Montpeyroux lies just northeast of Montpellier, nestled in the foothills of famous Larzac, the wines of which go for a high sum. Montpeyroux is a small village that has been prized for its exceptional wines since the Romans. It used to be an important trading post, as well as a refuge for pilgrims on their long trudge to Santiago de Compostella. This spring, our buyer based close by discovered this terrific red in the local wine bar and sought out the cellar. Vineyards here are buffeted all year round by the strong local wind, La Tramontane. It helps keep the vines disease-free and means the grapes ripen only slowly. Old-vine Carignan, Grenache and Syrah, it's a rich dark partner for a hearty casserole.
