There are documents showing that wine was made at this beautiful property as early as 1172, when it belonged to Ermengarde, Countess of Narbonne. We don’t know the exact style and quality then, but today it is exemplary – Corbières at its sensuous best! The estate has been in the same family now since 1803 – seven generations of women and now Guillaume Allien, the eighth generation. Despite being in his final year as a medical student, Guillaume gave it all up to restore the family estate and learn winemaking.
He works with consultant Gilles Dejean to make this luscious, dark-fruited red, which speaks clearly of its stony soils, the herbal-scented garrigue and its Corbières provenance. A warming red that’s perfect for a rich casserole.

Le XV is known to thousands as our ‘King of the Big Reds’. It owes its intensity to Grenache from vines, some over 100 years old, that grow on the rocky slopes of the Pyrenean foothills in the Montagne Noire and yield only tiny quantities of grapes. Le XV also benefits from the painstaking care of self-confessed southern French wine aficionado Mark Hoddy, whose draconian selection process sees him earmark in advance every vineyard he intends to harvest and micro-manage every stage of the winemaking. The key ingredient is Sauvignon – Gris that is, not Blanc – which combines spicy richness and lime freshness. All the grapes are tended at Ludovic’s superb estate in the Entre-Deux-Mers, just over the river from Le Chai au Quai, our winemaking HQ in Castillon.

Jean Gueridon is the proud owner and winemaker of Château Les Moutins in the beautiful rolling hills of Bordeaux's Entre-Deux-Mers. Jean bought the estate in 1995 and has been upping the quality every year since. On his extensive vineyards of clay and limestone, he grows mostly Sauvignon Blanc, with a touch of Sémillon, on vines that are mostly 40 years old.
No wonder, then, the concentration in the wine is so good. It certainly bowled over judges in eight competitions, winning Gold every time. With three months ageing on its lees, the wine has lovely texture and roundness, with a creamy note to the bright citrus and grassy fruit and lift of blossom. Chilled down, it's a cracker on its own, or with seafood or goat's cheese soufflé.

A fear of heights is a non-starter for those working in the vineyards of Vallée du Paradis. They perch perilously on the slopes below Peyrepertuse, an ancient Cathar fortress some 800m high in the Pyrenees. So collecting the intensely fruity, aromatic grapes is not for the faint-hearted. Luckily, winemaker Benjamin Andrieu is willing to put fear aside to tend them.
?The result is a really appealing red, with bright fruit and seductively spiced notes. Syrah brings ripe blackberry, herbs and liquorice notes, while juicy Grenache and peppery Carignan add even more depth and body. A top choice for those who love smooth, silky reds with the warmth of southern France. Great with grilled meats, pasta with pesto, aubergine bake or on its own.
From a fourth-generation-owned Pauillac cellar, B de Fonbadet may fall under the humble Bordeaux label, but it’s intensity and complexity leave no doubt about its high-end quality. This 2019 has even won the Decanter’s esteemed Platinum medal.
