M is for Merlot, M is for Malbec, it's a maverick wine, a meeting of minds! The minds are from Bordeaux and 150km east in Cahors. Blending their grapes, plummy Merlot and dark-fruited Malbec, and ageing in oak, the wine's all supple fruit and spice.

Step 1 take a special parcel of exceptional Bordeaux Merlot. Vinify it using a special no-sulphur method for maximum, gulpable fruit. Step 2: blend with a parcel of Malbec from its original French homeland, ancient Cahors. From growers who know how to draw out the grape's gorgeous black fruit and not its mouthcoating tannins. Step 3: age it in barrels to add notes of sweet spice to all that glorious fruit. The winemakers were so taken by their experimental cuvée, they insisted we shared it with you! This blending is a total No-No for Bordeaux's stuffy appellation laws (and Cahors too) and an utter Yes-Yes for customers who love ripe, smooth-fruited reds. So silky, you can drink it on its own. In the foothills of the Cévennes, in northernmost Languedoc, lie the great Crus of the region, Larzac and Pézenas. Threaded between them is this ancient, almost forgotten IGP. Smooth with black, polished herbal fruit.



Scattered on the high-altitude slopes of the Cévennes foothills, lie the vineyards of Terrasses de Larzac. The top wine from there fetches £100 a bottle. Nearby are the other Languedoc crus - Montpeyroux, Pézenas and Pic Saint Loup. Tucked away among them and in the shadow of the great Mont Baudile lies a forgotten IGP, named after this towering mountain.

Cave Fonjoya boasts 90% production of this tiny area and the very finest grapes are reserved for this wine. A classic blend of Syrah, Grenache, Carignan and Mourvèdre, it's a sumptuous, smooth red, with polished tannins and deep black fruit with herbal nuances. Search for Domaine La Sobilane and you'll see it has an amazing reputation for the famous, fortified sweet wine of this Mediterranean area, Rivesaltes. Some wines going back 80 years. They are knockout, but so is the estate's gorgeous, opulent dry white. Rivesaltes hasn't been a fashionable tipple for the last 30+ years, so the enterprising family, situated close to the Med and just east of Perpignan, explored other avenues. They planted native varieties which they believed would excel and made a dry white. This exotic blend of Grenache Gris and Vermentino with Chardonnay proves them right – ripe peach and apricot meld beautifully with a bright lemony zip and characterful notes of grilled almonds and blossom. For over 40 years, Corbières’ Cave de Fabrezan has proudly made nearly all its reds by maceration carbonique, an exactly and costly method which produces deliciously silky, fruit-filled wines. Bunches of hand-harvested grapes are left to ferment whole and their juice decanted off the skins at the precise moment the best colour and aroma have been extracted. This special Réserve is made from an exceptional parcel of pure Syrah – a dark, velvety, sumptuous red named after Fabrezan’s most famous ‘son’, Charles Cros. Born in 1842, he was a poet (inspiration for the Surrealist movement) and an inventor (for colour photography, the paleophone and what became the gramophone). An exceptional Syrah, it’s brimming with black fruit and pepper.
