Chai winemaker Mark Hoddy reserves the Belle Roche label for a red wine made from the best parcel of grapes of the vintage. In 2022 he found just the ticket in a few rows of dark, thick-skinned Cabernet, grown in high-up Languedoc vineyards close to Carcassonne. There the climate benefits both from Mediterranean and Atlantic influences, hence a wine that echoes both of the warm ripeness of the Med with the structure of Bordeaux.
It's a densely flavoured red, its colour almost black – the reason he calls it his precious ‘black diamond’ of the vintage. Meticulously crafted by Mark at the cellar, Belle Roche is best decanted an hour before serving, just like a claret. It’s ideal with a juicy steak, a rich lasagne or a hearty casserole. Decant.

Delicious depth and richness with real freshness give this Bordeaux white perfect balance. It’s a collaboration between our award-winning winemaker Jean-Marc Sauboua and owner of Château Le Coin Ludovic Roussillon.
The key ingredient is Sauvignon – Gris that is, not Blanc – which combines spicy richness and lime freshness. All the grapes are tended at Ludovic’s superb estate in the Entre-Deux-Mers, just over the river from Le Chai au Quai, our winemaking HQ in Castillon.
His claret is always a hit and nine years ago we persuaded him to make us a white too. The limestone soils help to produce lovely fruit intensity, while old-vine grapes and a tiny portion of oak fermentation lends even more richness. Great solo or with a creamy gratin.
Its vineyards are nearly all planted to Merlot, with a small amount of Cabernet Franc, and tended with meticulous care. As you can see from critics' scores, it is an admired claret and one that ages very well too. Matured in French oak (50% new), it has structure and length, but above all an appealing depth of luscious fruit and spice – like Christmas in a glass! So we were delighted when we finally secured access to some nearby white vineyards with incredible fruit that has allowed us to create the prestigious La Clarière Blanc. This dazzling white Bordeaux combines bright, character-filled Sauvignon Blanc and richer, creamier Sauvignon Gris to create an extraordinarily sensuous wine. It has enjoyed all the same lavish, no-expense-spared treatment in the winery usually accorded to the red, and the result is a citrussy, complex, textured wine that is absolutely irresistible. Oak fermented, lees stirred, and then aged in partnew oak barrels, the richness and complexity is reminiscent of the grand wines of Pessac Léognan. Smooth, rich, long and lavish … it's simply magnificent – a very worthy partner to the red. It's a truly fine dining partner that really shines when served with luxury cuisine.

Their wine story started in 1970 when Aimé and Véronique Guibert bought a chunk of the sleepy Gassac valley. Their friend and geology professor Henri Enjalbert noticed how the soils resembled those in Burgundy’s Côte d’Or and the estate now produces cuvées that cost well over £100. The Guiberts’ son Samuel created our exclusive Réserve using a rare blend of grapes and the same care that goes into his most expensive wines. Complex, weighty, fresh too.

Corbières is one of the best-known regions of southern France, adored for its characterful, robust reds, laced with dark fruit, wild herb and tobacco notes. This is a terrific find from the Terre d'Expression cellar in Fabrezan. It's a cooperative cellar, that works with its growers to gain exceptional quality grapes. All the fruit for Villa Pech Fourcat comes from a single estate in Boutenac, the only village in Corbières which may be named on the label.
Its wines are supreme thanks to very stony soils, hot dry summers and cooling winds. Vines for this red are, on average, 65 years old and very low yielding, which only adds to the power and intensity of this fabulous wine. For drinking now, open a couple of hours beforehand and decant.

One of Le Chai's most prized whites, La Voûte is the team work of winemaker Mark Hoddy and a meticulous grower in the Limoux, Bruno Bouché. Mark's aim with this wine is to make a rich, yet mineral-fresh Burgundy-style wine at an affordable price.
He knows exactly where to source the best grapes each vintage – Bruno Bouché's Astruc vineyard in Limoux Océanique, where the vines, planted at 300 metres, benefit from both the cooling Atlantic and the warmth of the Med. It results in intense ripe fruit with excellent freshness. After careful pressing the juice is put into new barrels to ferment slowly. A further year’s ageing in oak, with lees stirring, lends a creamy texture to the peachy lemon fruit. Serve cool with creamy sauced chicken.
