On Bordeaux’s Left Bank, in the heart of the Haut-Médoc, Pauillac is one of the most sought-after appellations for fine, muscular, long-aged claret. It boasts three Premiers Grands Crus Classés, namely Mouton-Rothschild, Lafite and Latour. Château Haut-Pauillac belongs to the Peyronnie family and boasts vineyards dotted between some of the finest estates – vines planted on gravel soils, enjoying a climate moderated by their proximity to the Gironde estuary. Largely Cabernet Sauvignon, softened by a little Merlot, the wine was aged for 18 months in oak barrels, 15-20% of which were new. To enjoy this fine claret, open an hour beforehand and decant. A superb red to serve with your finest red meat dishes or a choice of firm farmhouse cheeses.

It’s rare to see a French Merlot of this calibre at this price. This is partly explained by its provenance, the Languedoc Roussillon, “the most exciting region in France” (Sunday Times), which also provides much of France’s best-value wine. But credit must also go to ‘Merlot maestro’ Claude Gros, who perfected his skills in Saint-Émilion. Among his many successes is a now famous Merlot-rich Grand Cru, Château La Fleur Morange, that scored 96/100 from critic Robert Parker. Claude returned to his southern French roots, and Domaine Ginestières at the heart of the Minervois, where he makes this majestic Merlot at an amazingly down to earth price. The name 'Vertiges' translates as 'fear of heights'. Apt for a wine made from grapes gathered on precipitous slopes by Peyrepertuse Castle. 500m above sea level on a ragged Pyrenean peak, the vines produce a wine with luscious, ripe flavour.



A fear of heights is a non-starter for those working in the vineyards of Vallée du Paradis. They perch perilously on the slopes below Peyrepertuse, an ancient Cathar fortress some 800m high in the Pyrenees. So collecting the intensely fruity, aromatic grapes is not for the faint-hearted. Luckily, winemaker Benjamin Andrieu is willing to put fear aside to tend them.

?The result is a really appealing red, with bright fruit and seductively spiced notes. Syrah brings ripe blackberry, herbs and liquorice notes, while juicy Grenache and peppery Carignan add even more depth and body. A top choice for those who love smooth, silky reds with the warmth of southern France. Great with grilled meats, pasta with pesto, aubergine bake or on its own.
