One of Le Chai's most prized whites, La Voûte is the team work of winemaker Mark Hoddy and a meticulous grower in the Limoux, Bruno Bouché. Mark's aim with this wine is to make a rich, yet mineral-fresh Burgundy-style wine at an affordable price.

He knows exactly where to source the best grapes each vintage – Bruno Bouché's Astruc vineyard in Limoux Océanique, where the vines, planted at 300 metres, benefit from both the cooling Atlantic and the warmth of the Med. It results in intense ripe fruit with excellent freshness. After careful pressing the juice is put into new barrels to ferment slowly. A further year’s ageing in oak, with lees stirring, lends a creamy texture to the peachy lemon fruit. Serve cool with creamy sauced chicken.

The Lauren-Cabaret cellar has been making great wine in the Minervois region for almost 100 years. Villa Claudius is pure, handpicked Carignan, whole-grape fermented (like Beaujolais) to highlight its bright silky fruit, wild herbs and spice notes.

It’s rare to discover a red wine from the Minervois region made purely from Carignan. Even rarer, when it’s all from old-vine Carignan, but for this prize-winning cellar it’s something of a speciality, clear from the Gold medal that it’s already won. Winemaker Sylvain Delabre knows exactly how to get the very best from his precious handpicked grapes, bringing out all the supple blackberry and raspberry fruit, along with subtle notes of wild herbs and spice. Whole grape fermentation ensures the wine is deliciously silky and supple, with minimal tannins and no hard edges. A red wine with character and depth, and freshness too. A great choice with all sorts of midweek dishes – from grilled meats, to sausage and mash or pesto pasta.

Château de Lussac 2004

Lussac is a satellite appellation of Saint-Emilion, renowned for its high-quality, good-value clarets. Château de Lussac is one of the best, this superb 2004 showing mature notes of mellow, toasty red fruit, with hints of cedar and spice box.

Château de Lussac is a historic property, dating back to Gallo-Roman times. Vineyards were first planted by Benedictine monks, while the château you see today was built in 1876. It has changed hands three times, most recently purchased by the Laviale family in the early 2000s. They have worked hard to elevate the estate to be one of the leading properties of this satellite Saint-Emilion appellation. Most of the 23 hectares of vines are Merlot, with a little Cabernet Franc, bordered to the north by woodland. This superb, 20-year-old claret was aged for 15 months in 30% new oak, the rest in one-year-old barrels to lend this wine its structure and longevity. Showing mellow fruit complexity, enjoy alongside simple meat dishes or a firm cheeses.

Domaine Zind-Humbrecht Organic Pinot Gris Roche Volcanique 2018

Treat yourself to one of the world’s finest Pinot Gris. It may not be labelled 'Grand Cru', like many of the Zind Humbrecht wines are, but it tastes like one. Tiny yields, exemplary volcanic soils ensure an opulent, lusciously layered 94 point white.

Decanter has named Domaine Zind Humbrecht as one of France’s Top 10 wineries: “Does winemaking genius exist? If it does then Olivier Humbrecht MW must be in the frame.” Wine Advocate called the wines “absolutely impressive in their depth”. The family have been Alsace growers since 1620 and started making their wines in 1947. They now have 40 hectares, all tended biodynamically – by 22 full-time staff – to express as perfectly as possible the grape and its limestone ‘calcaire’ terroir. “Pinot Gris is a grape which has strong ties to the earth. It needs strong terroir and low yields to assert its character,” says Olivier Humbrecht. The wine's rich, creamy, exotic fruit shows how he got the balance just right. Perfect with sea bass or crab.

We’d love to reveal the name of the illustrious château behind this fine claret, but we’re sworn to secrecy. We can reveal, though, that it’s made at a Premier Grand Cru Classé estate in Pauillac whose Grand Vin sells for sixteen times the price.

L’Épiphanie de Pauillac is the latest of our secret releases from iconic Bordeaux châteaux. It hails from Pauillac’s top tier – a Premier Grand Cru Classé estate. There are only three in the appellation: Lafite Rothschild, Mouton Rothschild and Latour. We guarantee this wine is from one of them. It isn’t their Grand Vin, of course, but it’s made from the same fruit by the same winemaker and housed in the same barrels. Yet it costs less than 1/16th of the Grand Vin’s price.

L’Épiphanie de Pauillac has blackcurrant, cherry and ripe plum infused with subtle spice, cedar and cigar box notes. These classic aromas combine with firm tannins for a complex wine with a long finish. By all means open a bottle now, but cellaring will pay dividends.

The wines of Saumur-Champigny rarely escape the shores of France - they are too well-loved in their homeland. This is a gorgeously silky, supple, pure Cabernet Franc red, from Paul Pisani-Ferry's 300-year-old, certified-organic family estate.

Château de Targé has been in the Pisani-Ferry family since 1655. Paul P-F took over in 2017, to continue the family heritage and to give it new life. He immediately started converting the vineyards to be fully organic, so they would last another three centuries! He has reintroduced biodiversity, planting trees and different vegetation to attract the 'good' insects and deter the unwelcome. All the vineyards are centred around the 11th-century Eglise du Parnay, and are planted on limestone soils with the region's heroes, Chenin Blanc and Cabernet Franc. Paul has gained wide experience – in California, Stellenbosch, Mendoza and Sonoma. A light touch in the cellar has produced this fine, silky red. Superb with grilled meats or panfried tuna.
