When Hermann Schroeder decided to build a winery in 2001, little did he expect to unearth the fossilised bones of a 75-million-year-old dinosaur, later named Panamericansaurus Schroederi after the family. Aside from dabbling in accidental palaeontology, the Schroeders also make a range of award-winning wines. Their brand ‘Saurus’ paid tribute to the amazing discovery, whereas ‘Bariloche’ is named after a modern treasure of Patagonia.

The quaint town of Bariloche, a hot spot for winter sports, hosts the source of a number of meltwater rivers that feed into the valley where Schroeder’s vineyards lie. Made from handpicked Malbec grapes with a touch of oak, its bright cherry fruits come forth with a swirl of the glass. Ideal with grilled meats.

On Bordeaux’s Left Bank, in the heart of the Haut-Médoc, Pauillac is one of the most sought-after appellations for fine, muscular, long-aged claret. It boasts three Premiers Grands Crus Classés, namely Mouton-Rothschild, Lafite and Latour. Château Haut-Pauillac belongs to the Peyronnie family and boasts vineyards dotted between some of the finest estates – vines planted on gravel soils, enjoying a climate moderated by their proximity to the Gironde estuary. Largely Cabernet Sauvignon, softened by a little Merlot, the wine was aged for 18 months in oak barrels, 15-20% of which were new. To enjoy this fine claret, open an hour beforehand and decant. A superb red to serve with your finest red meat dishes or a choice of firm farmhouse cheeses.

Founded in 1946, Domaine Ferraton has always been a highly regarded estate. Yet since the Chapoutiers have come on board, quality has risen even higher. Open to reveal dense, smoky black fruit with wafts of herbal garrigue and liquorice, the essence of Northern Rhône Syrah. As with all wines from this outstanding domaine, Ginestières Merlot delivers quality and style beyond what you'd expect of a simple 'vin de France'. With dark cassis and wild herb flavours, this silky gem's a smart alternative to costlier St-Émilion.

It’s rare to see a French Merlot of this calibre at this price. This is partly explained by its provenance, the Languedoc Roussillon, “the most exciting region in France” (Sunday Times), which also provides much of France’s best-value wine. But credit must also go to ‘Merlot maestro’ Claude Gros, who perfected his skills in Saint-Émilion. Among his many successes is a now famous Merlot-rich Grand Cru, Château La Fleur Morange, that scored 96/100 from critic Robert Parker. Claude returned to his southern French roots, and Domaine Ginestières at the heart of the Minervois, where he makes this majestic Merlot at an amazingly down to earth price. Enjoy this Gold-medal winner's fine, dark cherry and wild herb character alongside roast chicken.
