Search for Domaine La Sobilane and you'll see it has an amazing reputation for the famous, fortified sweet wine of this Mediterranean area, Rivesaltes. Some wines going back 80 years. They are knockout, but so is the estate's gorgeous, opulent dry white. Rivesaltes hasn't been a fashionable tipple for the last 30+ years, so the enterprising family, situated close to the Med and just east of Perpignan, explored other avenues. They planted native varieties which they believed would excel and made a dry white. This exotic blend of Grenache Gris and Vermentino with Chardonnay proves them right – ripe peach and apricot meld beautifully with a bright lemony zip and characterful notes of grilled almonds and blossom. Treat yourself to one of the world’s finest Pinot Gris. It may not be labelled 'Grand Cru', like many of the Zind Humbrecht wines are, but it tastes like one. Tiny yields, exemplary volcanic soils ensure an opulent, lusciously layered 94 point white.

Decanter has named Domaine Zind Humbrecht as one of France’s Top 10 wineries: “Does winemaking genius exist? If it does then Olivier Humbrecht MW must be in the frame.” Wine Advocate called the wines “absolutely impressive in their depth”. The family have been Alsace growers since 1620 and started making their wines in 1947. They now have 40 hectares, all tended biodynamically – by 22 full-time staff – to express as perfectly as possible the grape and its limestone ‘calcaire’ terroir. “Pinot Gris is a grape which has strong ties to the earth. It needs strong terroir and low yields to assert its character,” says Olivier Humbrecht. The wine's rich, creamy, exotic fruit shows how he got the balance just right. Perfect with sea bass or crab.

An exuberant, super-fresh white from Chile's remote Elqui Valley, next door to the Atacama desert. Brisk nights ensure the fabulous crispness of Don Aldo, which combines Pedro Ximénez and Chardonnay in this intensely aromatic, mineral-zipped white.

At 2,100 metres above sea level, Don Aldo’s Pedro Ximénez vines account for the highest in Chile. This lofty altitude does wonders for the berries, lending full flavour concentration and intense aromas. As a variety best known for making superb, sweet, fortified wines, it shows its class here as an aromatic, dry white. A splash of Chardonnay brings bright peach fruit to the fresh, citrusy minerality. The wine is from two Italian winemakers – Don Aldo and Giorgio Flessati. Aldo was the first to leave his homeland of northern Italy for Chile’s Elqui Valley in 1951 and his cousin, Giorgio Flessati, joined him in the 1980s. Together they make Trophy-winning wines that impress. This is an exciting, out-of-the-box, crisp white. Very refreshing.

For a true taste of modern Spanish winemaking of the highest order, taste this fine white. From a tiny Basque appellation in northern Spain, close to the Atlantic, and made from a rare grape, this great white is mineral bright and intensely citrusy.

Getariako Txakolina is a small region in Spain's Basque country, very close to the Atlantic and the French border. It's cool there, often wet, and ocean breezes further help keep temperatures down. The outcome is extremely zesty-fresh whites. This is an outstanding 2018 from a great winemaker, Maitena Barrero. She's daughter to one of Tony Laithwaite's first Spanish contacts, Tony Barrero, and certainly has wine in the blood. She works at a very tiny estate and makes this terrific, linear-fresh white from the Hondurrabi Zuri grape. Fermented carefully with no oxygen contact and aged on its lees, it is superbly fresh, lemony and mineral-zipped, with that saline hint of the sea and a characteristic slight bubble too. First class with seafood.

Pinot Grigio has staged something of a coup in fridge doors and on dining tables in recent years. Gorgeously fruity, well-priced examples like our Il Papavero are rare, however. The wine is from Scipione Giuliani, who searches throughout Italy to find the finest parcels of grapes, usually blending them to get the perfect balance in a wine. For this Pinot Grigio, however, he was so taken with the fruit from the high hills of Sicily, with its idyllic sunshine and sea breezes, there was no need to look elsewhere.

Il Papavero is mouthwatering stuff, a moreish mix of pear and citrus flavours with both ripeness and bracing freshness thanks to the coastal cooled location of the vines. Pure delight on its own or with white meats or risotto.

We're delighted to joined forces with the internationally respected Royal Botanic Gardens, Kew, home to the largest living plant collection on the planet. Together we have produced a small range of wines that champion little-known grape varieties, often on the verge of extinction. Both parties champion biodiversity and work with nature to create beautiful things. In this case, a wine from a small family estate in Sicily.

This refreshing white is pure Carricante, an indigenous grape of the island, in particular of the volcanic slopes of Etna. Bright and zingy, with ripe stone fruits, floral hints and a crisp, mineral finish, this wine is a perfect foil for light, creamy pasta, risotto or seafood.
