Cabalié's popularity is down to a rare combination of imposing richness and easy drinking smoothness. Recreating that in white was no easy task. But Cabalié maestro Hervé Sabardeil has done it – years of searching, blending and hard work come to fruition in this, his ultimate expression of a southern French white. The magical grape mix is old-vine Viognier for intense honeysuckle aroma and soft texture, Muscat for dazzling grapey notes, and Colombard to keep it all zesty. And of course the other key ingredients are bright southern French sunshine, which ripens the grapes to perfection, sea breezes to keep them healthy and night harvesting to ensure maximum freshness. Bursting with tropical fruit, Cabalié is perfect with seafood or chicken.
Castel del Lago employs Soave’s Garganega with a dash of Chardonnay. From vineyards overlooking beautiful Lake Garda, the grapes are well ripened, adding peach and apricot notes to this beautifully expressive white.
Castel del Lago is an exciting, super-fresh white from Matteo Bernabei. Consultant for pricy top wineries by day, he has his own vines where, by night, he makes this gem. It features Garganega, the key grape of Soave, that naturally lends citrusy freshness. Grown on sloping vineyards that lead down to the lake (the largest in Italy) the grapes ripen really well. All that sunshine is reflected off the water back up to the vines. The soil helps too – stony and well drained, it adds to the fruity intensity. Matteo then blends in a dash of Chardonnay and ages the wine several months on its lees, which lends a delicious creamy weight to the freshness. It's a wine that's ideal on its own or with food, such as prosciutto and melon, fish or salads.

However, every vintage, our friend the virtuoso winemaker Javier Murúa uses his impressive contacts to locate small parcels of Verdejo in the cooler parts of central Spain to create this exclusive cuvée. In 2021 the high plains of La Mancha and areas close by provided just what he was looking for. We love Lime Leaf’s pure, limy flavours at a quality that belies its humble ‘table wine’ classification and always at an enticingly low price.
